To make mint parathas you will need:
1. 1 cup wheat flour
2. 1/2 cup besan ( bengal gram flour)
3. 2 tbsp. curd or plain yogurt
4. 1 cup chopped mint leaves
5.1/2 cup chopped coriander leaves
6. 1 or 2 green chillies finely chopped
7. 1/2 tsp.cumin seeds
8. 1/2 tsp salt or according to taste
9. 2 tsps.sunflower or any vegetable oil.
Mix all the above in a bowl and make a dough adding small amounts of water. Keep the dough covered for a couple of hours. Knead it well and divide into lemon sized balls. Roll each ball into a round and if you wish, fold it in four and then roll it again to make a round paratha. By doing this , you will get a softer paratha.Otherwise, you can just roll each ball into a round paratha. Heat a pan or tawa , smear it with some oil and put the rolled paratha on it. Turn it over and cook both sides till brown spots appear. You can add some drops of oil on both sides as you cook it.
Serve hot with dal , raita or simply with curd and pickle.
